21 Day Fix ~ Slow Cooker Chicken Enchilada Soup

Its that time of year again, the air is cool, the leaves are changing and we are crazy busy with soccer in our house!! So… I reach for my crock pot 2-3 times a week or more for dinners. Moms! Can you relate? All the school, sports and last minute outside activities the slow cooker is a huge lifesaver for my family! Soups are a favorite when the weather turns cold!  This recipe is like having delicious enchiladas in a bowl of soup! It’s a family favorite and you can freeze the leftovers….that is if you have any!

What You Need –

4 Large Chicken Breast
1 Green Bell Pepper diced
2 crushed cloves of garlic
1/2 diced onion
2 tblsp taco seasoning (I make my own)
1/2 cup regular salsa or salsa verde (no sugar added)
3 cups Organic low sodium Chicken broth
14 oz diced tomatoes
8 oz tomato sauce (no sugar added )
1 1/2  cups of spinach
1 tablespoons chili powder
1/4 teaspoon cayenne
1 teaspoons cumin
2 tablespoons chopped oregano leaves
1 teaspoon chopped rosemary leaves
2 tablespoons lemon juice
2 teaspoon freshly-ground black pepper
shredded cheese sprinkled on top
plain greek yogurt, or avacado you could add to top of soup **OPTIONAL** and you will have to adjust containers

Instructions –
Add all ingredients to Crock Pot
cook on low for 4-6 hours

Nutrition: 21 Day Fix Containers per serving (2 cups) -1 red (chicken mixture) 1 green (sauce) 1/2 blue (cheese) **Salsa a 1/2 cup for the whole pan seemed not enough to count as a half purple it is up to you if you want to or not. I didn’t count it at all**

Healthy Slow-Cooker Honey Apple Pork

Crockpot Honey Pork and Apples

So Easy…

So Delicious! This wonderful recipe is Paleo, Clean Eating and Gluten Free! Most of all is great because it’s a slow cooker recipe. BONUS!! Your house will smell amazing!! I love using my crock pot to help me save time in the kitchen, especially during soccer season.

This recipe was so easy to prepare, it took me less than 10 minutes to assemble it together and place in my slow cooker.

It slowly cooked all day and the house smelled incredible with the cinnamon and honey when we got home from the games. The pork was so tender and full of flavor! My family loved it and can’t wait for me to make it again! This delicious Crockpot Honey Pork and Apples goes well with roasted brussel sprouts or roasted asparagus with lemon.

Serves: 6
Ingredients
  • 1 (3-4 lb) pork tenderloin
  • 2 large granny smith apples. sliced
  • ½ cup honey
  • 2 tbsp cinnamon
Instructions
  1. Slice slits in pork tenderloin.
  2. Place 1-2 apple slices per slit.
  3. Place ¾ of remaining apple slices in bottom of crockpot.
  4. Drizzle ½ of the honey over apple slices.
  5. Place pork on top of apple slices.
  6. Sprinkle cinnamon over everything.
  7. Place remaining apple slices on top and drizzle the remaining honey over everything.
  8. Place lid on and cook on low for 8 hours.
  9. Remove from slow cooker, slice and serve with apples on top.

HEALTHY SLOW-COOKER JERK CHICKEN TACOS WITH CARIBBEAN SALSA

If you love having a healthy meal ready for your family without the stressing about spending a ton of time in the kitchen….

YOU WILL WANT TO MAKE THIS!!! :) It’s DELICIOUS and SIMPLE!!! Your kitchen will smell amazing! The chicken is so tender & all the flavors are so perfect together. You could easily make this with less heat and add a few addition favorites to the meal.

{{{I’ve added roasted sweet potatoes & a sweet corn to mine and everyone loved it}}}

Slow-Cooker Jerk Chicken Tacos with Caribbean Salsa:
Serves 6 – Gluten Free 
Serving Size = 2 Tacos – 272 Cal – 6g Fat – 11g Sugar


Ingredients for Caribbean Salsa:
– 3 garlic cloves, crushed
– 2 tablespoons jerk seasoning
– Kosher salt
– 1.5 lbs boneless, skinless, chicken breasts
– 2 tablespoon lime juice
– ½ cup orange juice
– 2 tablespoon chopped fresh cilantro


Ingredients for Caribbean Salsa:
– 1 large mango, diced
– 1 medium Hass avocado, diced
– 1 tablespoon chopped red onion
– 2 tablespoon chopped fresh cilantro
– 1.5 tablespoon fresh lime juice
– pinch kosher salt
– Freshly ground black pepper

FOR THE CHICKEN: Combine the garlic, jerk seasoning, and ¼ teaspoon salt & spread it over the chicken. Put the chicken, the lime & orange juices, and cilantro in the slow cooker. Cover & cook on high for 2 hours.

FOR THE CARIBBEAN SALSA: Meanwhile, in a medium bowl, combine the mango, avocado, red onion, cilantro, lime juice, salt, and black pepper to taste. Refrigerate until ready to serve.

Remove the chicken from the slow cooker & shred it using two forks. Pour any liquid in the slow cooker into a bowl, then return the chicken to the slow cooker. Add ½ cup of the reserved liquid, just enough to moisten the chicken, and season with 1/8 teaspoon salt & black pepper to taste.

Heat the tortillas in a skillet set over medium-high heat for about 30 seconds. Fill each with 1/3 cup of chicken and 2 tablespoons of salsa.

PS – like most corn tortillas, they CAN get a little crumbly/mushy with too much liquid – so heads up on that – or if you’re not too concerned – try them with the low carb or flour tortillas!

I’m Happy!!  Monday it was dumping snow but today the sun is shining and it’s going to be about 60 degrees and I’m seriously looking forward to the warmer weather! I like the beauty of a snowstorm but I prefer the sunshine and warmth! I guess it’s the California girl in me. :)  I’m opening up the windows today to let in some fresh air this morning!  It feels so good.With the warmer weather coming that also means that you slowly begin to shed the winter jacket, the boots, the warm and fuzzy sweatshirts/sweaters for lighter jackets, flip flops and skirts, shorts and tank tops! I don’t know if you can relate, but as a stay at home mom I LIVE in YOGA pants and t-shirts and zip up hoodies!

Have you ever had that moment when you zip up those jeans or put on that shirt that you haven’t worn in awhile and suddenly it’s a struggle to get them over your thighs and you have a little extra muffin top over those jeans?   Its a pretty harsh reality that something needs to change! I  know I just can’t hide behind my stretchy yoga pants for the rest of my life.  Its comfortable for sure, but it’s not what I’ll be wearing on date night, trips to the beach vacations or family activities for example!  I want to feel confident, have energy and not want to crawl in a hole every time I have go out in public.

Also, how about that wedding or reunion you have this spring/summer! Do you have anything to wear to that or are you standing in your closet full of clothes saying to yourself that after this winter you can’t fit into any of your dresses.  Or are you thinking, If I just get off this 5 lbs I can wear so many more outfits.  Maybe you are like me, I sat on the edge of my bed in tears because nothing fit and I still hadn’t lost all of that baby weight…my kids were approaching their teenage years!! I didn’t have a lot of flexible spending money so I had to make it work with what I had!  I felt like my hands were tied!  In reality I just thought it was my reality forever!

I was scrolling facebook and ran across a post by one of my fitness mentors about joining her challenge group!  I had no idea what the heck a challenge group was.  But I was feeling frustrated and something inside me said it was time to try anything!  I started my journey with Insanity…funny how things work! I love to hate that program!  {maybe it wasn’t the best place to start since its the hardest program out there, but I had made up my mind} and I was committed!  I worked out every day in our living room no matter what time of day, even if I put it off until dinner time!

I wanted to change more than I wanted to stay the same!  My 40+ birthday was coming up and it was my motivation to change!  so I got to work! I started eating healthier, paying attention to the quality of my foods, eating for energy, fueling my body with nutrient dense choices, upping my water intake, and replacing 1 meal a day with shakeology!  I slowly started to see changes in the way my clothes fit and the scale was moving..down!

I finished Insanity and started Les Mills Pump, 30 lbs gone, and an entirely new person feeling energetic and confident my skin!!!!  Honestly if it wasn’t for the support of my family and the other ladies in the challenge group I would of quit after the 2nd week when the weight wasn’t coming off fast enough!

But because of the awesome support I put finally realized that this is a process and a journey!  It’s a lifestyle change and not a crash diet. It took me longer than 2 weeks to put on the weight and it would take longer to get it off. So I started working on ME!  Strengthening myself from the inside out.

I was committed to this new lifestyle for myself and my family.  Everyday I would check into the challenge group, post my workout ratings, food ratings and ask questions about where I was struggling.  I’ve never been good about going to the gym and honestly it’s just not a comfortable environment for me.  I had my support group in the comfort of my own home!

If we’re honest with ourselves, its so easy to skip a workout, to not make healthy choices, to ignore the feeling in your gut to dig deeper if you don’t have accountability!  It’s not about a bag of powder and a box of workout DVDs.  Its about being a part of something more and knowing that you matter to others.

So have you looked at your calendar?  ONLY 6 weeks until the unofficial start of summer!!!  Don’t even stress! I want to invite you to join me in a 6 Week Bootcamp!  I am going to teach you the principles of clean eating, how to fuel your body for energy, for healthy weight loss, and how to make this a lifestyle change and not let you fall victim to the crash diet.

I am going to share my meal plans, guide you to creating your own, give you recipes, tips and ideas to help you achieve your goals. Whether its 5lbs or 20+ lbs I can help!  I really truly love what I do and I get no great joy than seeing other people succeed!
